As promised, here's my favorite recipe for spicy BBQ sauce. If you wish to make it a little less/more spicy, just adjust the amount of dry mustard and jalapeno peppers that you use.
1/4 c extra virgin olive oil 1 tsp basil or thyme (or both) 1-1/2 tsp minced garlic 2 med onions, finely chopped 1-2 jalapeno peppers, minced (leave seeds in) 1 6-oz can tomato paste 1/4 c white vinegar 1/2 c Worcestershire sauce 1/4 c honey 1/2 c beef stock or bouillon 1-1/2 tsp dry mustard (like Coleman's) 1 tsp salt
Exercise caution when handling the peppers...wash your hands well immediately after chopping and adding to sauce. The oil can burn if you get it in your eyes.
Heat the olive oil over high heat in 10-12" skillet until hot. Add garlic, onions and peppers and cook, stirring frequently, for 3-4 mintes without letting onions brown. Combine the tomato paste and vinegar and stir until blended; add to skillet. Stir in basil or thyme, honey, beef stock, Worcestershire, salt and dry mustard. Mix thoroughly and simmer uncovered over low heat for 15 - 20 minutes. Makes enough sauce for 4# of meat. Will keep in the fridge for 2 weeks.
Enjoy, and please let me know how you like it.
